OilScore is public-interest infrastructure for food-preparation transparency: an evidence graph that records what touched your food, from biological source to the plate, with every claim carrying its source, confidence and revision history. We are not a regulator and never pose as one. We are the neutral register a regulator, municipality or research institution can build on.

Every fact carries its source, confidence and revision history; any future score will point to a versioned methodology and an input snapshot. Facts are never deleted: they are superseded, keeping institutional memory intact. Scores publish only after the objection-and-reply procedure is live.
A binding constitution outranks our commercial interests: money cannot buy a better score, unknown stays unknown, businesses are rewarded for disclosure and never publicly shamed.
Country-adapter architecture: Belgium is reference implementation #1 (official registry data, NACEBEL sectors, municipal geography). Every EU member state is an adapter, not a fork. GS1/EPCIS-compatible provenance.
How it looks in practice
Opens the coverage view for one municipality and sees at a glance which venues confirmed their fat, which carry unconfirmed reports and which are honestly unknown. Ten minutes of context that used to take a stack of phone calls.
Receives a transparency report for its own territory: coverage, evolution, and where the fog is lifting. Early reports are compiled on request while the register grows; the numbers always come with their confidence thresholds.
Pulls a research-safe dataset from the public read API, with methodology version and provenance attached to every record. No scraping, no guessing.
Further ahead: an automated sensor layer that tracks fat condition at the fryer and reports it continuously, shown here the day it is testable and not before.
Scientific grounding
The register records two scientifically meaningful dimensions of frying fat: identity (which fat, from which biological source, through which processing) and condition (degradation of heated fat, measured as total polar materials, the standard rejection metric for frying oil across Europe). Identity is live today via declarations with provenance; condition is the planned instrument-based measurement layer, piloted before any publication. Regulatory anchors we align with, never replace: EU Regulation 2019/649 (max 2 g industrial trans fat per 100 g fat) and member-state polar-compound limits for frying oil. We record evidence; regulators regulate.
Measurable objectives
- Full population coverage. Done: 80.808 venues from the official Belgian business register (KBO/CBE, NACEBEL food-service codes), refreshed twice monthly with a full sync ledger.
- 100 operator-confirmed dossiers before the first Transparency Index publishes. Scores never precede the objection-and-reply procedure.
- One fully transparent reference municipality as the reproducible model for the other 606.
- TPM measurement pilot with 10 venues: instrument-based fat-condition data, methodology versioned and published first.
- Research-grade open data. Public read API live today; dataset exports for institutions on request.
Honest state of the register
80.808 venues from the official register, 606 municipalities mapped, 14 canonical fats in the ontology. We publish statistics only above confidence thresholds: you will never see a percentage built on thin data.
